PORK SAUSAGE AMAZON STYLE

One sees these homemade sausage hanging up for sale at the public markets.

They are simply made and best eaten fresh.

2 pounds boneless pork, cubed

1 pound bacon, cubed

⅛ teaspoon ground nutmeg

1 teaspoon salt

¼ teaspoon cumin

1. Grind all the ingredients together in a food processor until chopped but not too fine. There should be some texture.

2. Stuff the mixture into sausage casing, available at most Italian meat markets. Cut into 4-inch-long pieces when you are ready to cook the sausages.

The best method is to barbecue the sausages over charcoal until crisp. If not, fry them without oil in a skillet until crisp. Discard all the fat. Makes 10 sausages
